Fall Recipes and Eating Fresh Fall Produce

As summer cools down and the leaves begin to fall you may think that the bounty from the garden is ending. Nothing could be further from the truth. Fall brings plenty of fresh eating opportunities for you to take advantage of and a variety of amazing flavors to use in the kitchen.

Hit your farmer’s market or local you-pick farm and stock up on in-season produce so you can enjoy the best prices, and best flavors, and the best materials for delicious meals for your family. This post is going to give you a recipe for Herb & Bacon Potato Salad and feature other recipes using some of fall’s favorite foods: apples, cabbage, carrots, kale, potato, pumpkin, and sweet potato. Herb and Bacon Potato Salad

Herb and Bacon Potato Salad

This hearty and flavorful potato salad makes a great main course for a “meatless Monday” meal (although technically a slice of bacon is meat. I tend to think of it as a separate food group.) or as a fabulous side-dish. Potatoes are available in bulk during the late summer and early fall and will store well for weeks and even months.

Ingredients:

  • 1lb potatoes, cubed (approx 4 cups)
  • 1/2 C sliced radish (or kohlrabi), opt.
  • 2 slices bacon, crisped and crumbled

Dressing:

  • 3 Tbl mayonnaise
  • 2 Tbl milk
  • 1 1/2 tsp Dijon mustard
  • 1 tsp fresh basil, chopped
  • 1/2 tsp garlic, minced
  • 1/2 tsp fresh thyme, chopped
  • 1/4 tsp onion powder
  • 1/4 tsp celery salt (opt.)

Placed cleaned and cubed potatoes in medium saucepan and cover with hot water. Bring to a boil before covering and simmering over low heat for 10-15 minutes until tender. Drain the water and while potato cubes are cooling mix the dressing ingredients. Combine potatoes, bacon, radish or kohlrabi (if using), and dressing and serve hot or cold. Serves 6.
