Star-Shaped July 4th Berry Pancakes

The 4th of July is not only about big parades, sparklers and fireworks. It is about gathering together with friends and family to enjoy a meal. The meal could be a picnic, cookout or a festive Independence Day breakfast. These star shaped berry pancakes would be wonderful to serve at a festive breakfast. The pancakes contain red ripe strawberries and slightly tart blueberries. The addition of berries to the star shaped pancakes adds vivid color and wonderful texture to a basic pancake mix.

Here are the ingredients my son and I used to make the star shaped berry pancakes:

  • 2 cups of pancake mix
  • 1 large egg
  • 1 1/3 cups of milk (We used skim milk.)
  • 2 tbsp. of sugar
  • ½ cup of blueberries slightly smashed
  • ¾ cup of strawberries sliced into tiny bites
  • Butter or margarine enough to grease your pan or griddle

Directions:

My son and I mixed all of the ingredients except the berries together in a large bowl. ( We have to used a large bowl to prevent the mix from flying out of the bowl. One of us likes to mix vigorously.)

The berries were added to the mix when it was almost smooth by folding them slowly and carefully as we could. The pancakes keep their natural color if the berries are folded in.

Set the mix aside for a moment to rest while you prepare your griddle or frying pan by slightly greasing it.

When the griddle or frying pan sizzles, add a enough of the mix to make a pancake.

Continue cooking the pancakes until all of your pancake batter bowl is empty.

Let the pancakes cool before using cookie cutters to cut out the star shapes.

Set the pancake scraps aside to mix with additional berries later in the day or maybe while watching fireworks.

Reheat the star shaped berry pancakes before serving in a warm oven or in the microwave.

We added a smattering of sliced blueberries and strawberries to the platter along with some strips of bacon.

My son could hardly wait to try these delicious star shaped berry pancakes. As soon as I took the picture above he asked to do a “taste test”. These wonderful pancakes not only made him smile and they left him wanting more. I think if you make them for those gathering at your house on the 4th of July you will leave them asking for more too.
